Green asparagus salad

Ingredients for 2 servings:

  • 250 g asparagus, green
  • 2 tbsp pine nuts
  • 4 slice(s) Black Forest ham, thinly sliced
  • n. B. Salt
  • 1 pinch(s) of sugar
  • 1 tbsp vinegar
  • 1 tbsp walnut oil
  • n. B. Chives, fresh, cut into rolls

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

with pine nuts and ham

Cook the asparagus in salted water for 10-15 minutes, until tender, then let cool. Reserve some of the cooking water. Toast the pine nuts in a pan without oil. Make the dressing by combining 3 tablespoons of the asparagus cooking water with salt, sugar, vinegar, and oil. Arrange the asparagus on plates and pour the dressing over it. Garnish with the ham and sprinkle with the pine nuts. Finally, cut the chives into small rolls and scatter them over the dish.
