Ingredients for 1 servings:
- 5 eggs
- 100 g sugar
- 1 packet of vanilla sugar
- 100 g hazelnuts, roasted, grated
- 100 g breadcrumbs
- ¼ liter orange juice
- 6 tbsp rum
- 400 ml milk
- 150 g sugar
- 2 packs of pudding powder (caramel flavor)
- 250 g butter, soft
- 40 ladyfingers, about
- ¼ liter cream
- 1 pack of cream stiffener
- some chocolate shavings
- possibly pudding powder, chocolate or tiramisu
Instructions
Working time approx. 45 minutes; Rest time approx. 12 hours; Total time approx. 12 hours 45 minutes
Beat the eggs, sugar, and vanilla sugar until creamy. Mix the nuts and breadcrumbs well and fold in. Preheat oven to 170°C. Spread the mixture evenly onto a greased and floured baking tray (approx. 30x35cm). Place the tray in the center of the oven and bake for approx. 30 minutes. Mix the orange juice and rum and drizzle 1/3 of the juice over the still-warm batter. For the cream, prepare the milk, sugar, and pudding powder according to the instructions on the packet, then let it cool to room temperature. Cream the butter until fluffy and quickly stir in the pudding. Spread the cream evenly over the cooled base. Dip the sponge fingers in the remaining juice and place on the cream. To cover, whip the cream with the cream stiffener and spread evenly over the sponge fingers. Sprinkle with chocolate shavings. It’s best to chill overnight. Instead of the caramel pudding, I like to use either chocolate or tiramisu pudding.
