Preheat the oven to approximately 175°C. Cut the bell peppers into strips and remove the seeds. Slice the onion into medium-thick rings. Place the gyro in a pan and sear briefly. Important: Do not overcook, or it will dry out when gratinated. Place the gyro in a casserole dish, without any liquid. Mix in the onion rings and bell pepper strips, and top with the hollandaise sauce. Finally, top with grated mozzarella. Bake in the oven at 175°C for approximately 20 minutes, until a golden-brown cheese crust forms. Serve with homemade fries made from fresh potatoes, croquettes, or hash browns.
