Ingredients for 2 servings:
- 2 thin flatbreads, Arabic or tortillas
- 2 handfuls of fresh Thai herbs (e.g. coriander, Thai basil)
- 50 g peanuts
- ½ red chili pepper(s)
- some lime wedges for serving
- 350 g chicken breast fillet(s)
- 1 stalk of lemongrass or 1 tsp lemongrass powder
- 1 kaffir lime leaves
- 1 garlic clove(s)
- ½ red chili pepper(s)
- ½ tsp coriander powder
- 3 tbsp lime juice
- 4 tbsp sesame oil or peanut oil
- Salt
- 100 g peanuts, roasted, salted
- 1 garlic clove(s)
- 1 tbsp raw cane sugar
- 125 ml water, boiling

Instructions

Clean the chicken fillets, cut into approximately 5 mm thick slices, and place in a bowl. Trim the lemongrass, cut into approximately 3-4 cm long pieces, halve lengthwise, and press lightly. Cut the kaffir lime leaves into very thin strips, the peeled garlic into wafer-thin slices, and the chili pepper into thin rings. Add everything to the chicken along with the coriander powder, lime juice, a little salt, and oil and mix. Marinate in the refrigerator. Meanwhile, wash the herbs, shake them dry, and remove the stems. Chop the peanuts and thinly slice the remaining red chili pepper. For the sauce, peel the garlic and finely puree the specified amount of peanuts with the garlic, raw cane sugar, and boiling water—if available, in a blender or food processor, or in a tall container with an immersion blender—and season with salt. Heat a pan without oil until very hot. Briefly toast the flatbreads on both sides. Then remove them and add the meat to the pan until cooked through. Reduce the heat slightly. While they’re cooking, brush the flatbreads with the sauce and scatter the herbs on top. Remove the lemongrass stalks and place the fried chicken, garlic, chili, and kaffir lime leaves on top of the flatbreads, then drizzle with any cooking liquid. Sprinkle with the remaining chili rings and chopped peanuts, if desired, and serve with lime wedges. This dish goes well with a Thai cucumber salad, for example.
