Fried tomato and mozzarella ravioli

Ingredients for 2 servings:

  • 250g mozzarella
  • 360 g Maultasche(s) from the refrigerated section
  • 2 large tomatoes
  • 1 onion(s)
  • basil
  • Parsley
  • salt and pepper
  • some olive oil
  • possibly Maggi

Cut the Maultaschen and mozzarella into small strips. The mozzarella strips should be sliced ​​very thinly so they melt better. Then slice the tomatoes into strips and finely chop the onion. Heat a pan with plenty of cooking fat. As soon as the fat is sizzling, add the sliced ​​onions. Sauté the onions until golden, then add the Maultaschen to the pan and fry until browned. Form a pile of onions and Maultaschen in the pan. Distribute the tomatoes evenly over the top and add the mozzarella strips. The mozzarella should cover the pile. Fry for about 1-2 minutes more, then turn. Fry for about 1 more minute, then spread everything out nicely. Add salt and pepper—I season generously so that it’s clearly visible. Then add a dash of olive oil. Season with basil and parsley. Add Maggi seasoning if desired, but only a little. Toss everything in the pan and fry for a little longer. The mozzarella and tomatoes should now form a thick sauce. Serve fresh, ideally with a salad (iceberg lettuce, peppers, and cucumbers with a yogurt dressing).
