Potato and curd patties

Ingredients for 4 servings:

  • 1,000 g potato(s), floury
  • 500 g quark
  • 2 eggs
  • 1 onion(s)
  • 2 garlic cloves
  • e.g. breadcrumbs
  • salt and pepper
  • Parsley, chopped

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Boil the potatoes in water, drain, allow to cool, peel, and press through a potato ricer. In a large bowl, combine the mashed potatoes with the quark. Peel and finely dice the onion, and sauté in olive oil until translucent. Mix with the potato and quark mixture, add the eggs, and season with salt, pepper, and chopped parsley. Form the mixture into patties, roll them in breadcrumbs, and fry on both sides in hot oil. Serve on a bed of lettuce.
