Asparagus salad with strawberries

Ingredients for 4 servings:

  • 1 kg asparagus
  • 1 bunch of spring onions
  • 1 pepper, red
  • 1 tbsp ginger
  • 6 tbsp oil
  • 1 tbsp soy sauce
  • 1 tbsp chili sauce
  • Salt
  • pepper
  • Sugar
  • 200 g strawberries
  • 1 bunch of coriander leaves

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the asparagus and cut into thumb-length pieces. Wash the spring onions and slice into rings. Finely chop the red pepper. Sauté the asparagus, spring onions, pepper, and ginger in hot oil for about 5-8 minutes. Rinse the strawberries and halve or quarter them as desired. Prepare a marinade with sherry, soy sauce, chili sauce, salt, pepper, and sugar. Arrange the asparagus and strawberries on plates and drizzle with the vinaigrette. Garnish with the coriander leaves before serving. Serve with fresh white bread.
