Quark meatballs with mushrooms

Ingredients for 4 servings:

  • 500 g Mett, Thuringian or minced meat
  • 1 bunch of parsley
  • 1 bunch of chives
  • 1 onion(s)
  • 2 tbsp breadcrumbs
  • 2 eggs
  • 250 g quark (low-fat quark)
  • salt and pepper
  • 1 pinch(s) nutmeg, freshly grated
  • 50 g clarified butter
  • 500 g mushrooms
  • 125 ml vegetable stock
  • 1 tsp flour
  • 250 g sour cream

Peel the onion and dice very finely. Pick the parsley leaves and chop finely. Knead both with the minced meat, breadcrumbs, eggs, and quark. Season with salt, pepper, and nutmeg. Using wet hands, form the meat mixture into 8 meatballs. Clean the mushrooms, halving if necessary. Brown them in 25g clarified butter in a large pan. Then transfer to a small saucepan. Mix the stock, flour, and sour cream and add to the mushrooms. Season with salt and pepper and simmer over medium heat for 5 minutes. Heat the remaining clarified butter in the pan and sear the meatballs on both sides. Then continue to cook over low heat for about 8 minutes on each side. Cut the chives into rolls, add to the mushrooms, and serve with the quark meatballs. Mashed potatoes make the perfect accompaniment.
