Ingredients for 8 servings:
- 2 ½ kg potatoes
- 2 small onions
- ½ apple, e.g. Boskoop
- 6 gherkins
- 150 g Black Forest ham
- 1 jar salad cream (Miracel Whip)
- salt and pepper

perfect as a barbecue side dish
Boil the potatoes (I prefer the “Allians” variety). They shouldn’t be too soft, so they don’t fall apart when stirred later. Let them cool thoroughly and dice them. Finely chop the onions, apple, and pickles and place them in a large bowl. Trim any excess fat from the Black Forest ham, dice it, and add it to the bowl. Stir, season with salt, and pepper. Add the Miracle Whip and stir. Only then add the potatoes and stir thoroughly. Taste and adjust the seasoning if necessary. The potato salad should ideally sit for 2 hours. It’s important to season again with salt and pepper afterward and add any excess salad dressing to prevent the salad from becoming too dry.
