Ingredients for 1 servings:

  • 250 g butter, soft
  • 10 g fresh herbs (basil, parsley, chives)
  • 2 cloves garlic
  • 20 g Parmesan, fresh, grated
  • 1 lemon(s), untreated
  • 10 g anchovies, in oil
  • 10 g tomatoes, dried, preserved in oil
  • 10 g olives (Kalamata)
  • 1 tbsp tomato paste
  • 1 tbsp olive oil
  • e.g. black pepper, freshly ground, or chili flakes, ground

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Finely chop the herbs, peel and finely chop the garlic, grate the Parmesan cheese, and zest the lemon. Finely chop the anchovies, sun-dried tomatoes, and olives. Using a blender/hand mixer, stir everything into the softened butter, add the tomato paste, olive oil, and pepper or chili flakes, and mix well. Transfer to a bowl and refrigerate, or use straight away. It will keep for up to two weeks in the refrigerator. Umami is a term used to describe a broader taste that cannot be clearly classified as sweet, sour, salty, or bitter. It has been described as savory, meaty, spicy, or delicious.
