Quark cake without a base

Ingredients for 1 servings:

  • 6 eggs
  • 1 pinch of salt
  • 350 g sugar
  • 2 organic lemons
  • 1,000 g dry curd cheese
  • 100 g semolina
  • 1 packet of baking powder
  • 1 tbsp flour
  • Fat for the mold
  • possibly powdered sugar for dusting

Instructions

Working time approx. 20 minutes; Rest time approx. 2 hours; Cooking/baking time approx. 1 hour; Total time approx. 3 hours 20 minutes

according to grandma’s recipe

Separate the eggs and beat the egg whites with a pinch of salt until stiff peaks form. Then refrigerate. Grate the zest of one lemon and squeeze the juice of both lemons. Beat the egg yolks with the sugar, lemon juice, and zest until frothy. Stir in the quark, semolina, baking powder, and flour. Carefully fold in the stiff peaks and pour the mixture into a greased springform pan. Bake the cake in a preheated oven at approximately 160°C (convection oven) for 60-75 minutes. Test the doneness with a skewer. If the top of the cake is too dark, cover with aluminum foil. Let it cool after baking and decorate with powdered sugar, if desired.
