Ingredients for 2 servings:
- ½ cucumber(s)
- 1 apple
- some fennel
- 3 tbsp natural yogurt
- 2 tsp lemon juice
- 1 tsp mustard, medium hot
- some salt
- some oil
- 2 tbsp water
- some walnuts, chopped
Instructions

Peel the cucumber and apple (unless they’re organic or homegrown) and dice them. Toss the sliced apples with 1 teaspoon of lemon juice to prevent them from turning brown. Finely chop the fennel. Mix the yogurt, the remaining lemon juice, mustard, oil, salt, and water to create a smooth marinade. Place the apple and vegetable mixture in a bowl and toss with the marinade. Garnish with some fennel leaves and walnuts.
