Fruity light summer salad

Ingredients for 2 servings:

  • 1 bell pepper(s), red, diced
  • 1 red apple, diced
  • 1 cucumber(s), diced
  • 1 bunch of spring onions, cut into rings
  • 1 small can of corn
  • 100 g low-fat curd cheese
  • 100 g sour cream
  • 2 tbsp lemon juice
  • 1 tbsp Dill, fresh, finely chopped or dried
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes

Place the apple, bell pepper, cucumber, and spring onions in a bowl. Drain the corn and add it. Mix the low-fat quark with dill and sour cream in a bowl and season with lemon juice, salt, and pepper. Toss with the salad ingredients and let the salad sit for at least 2 hours. This salad is perfect for summer. It’s delicious with a barbecue or simply as a light meal.
