Smokey's Winter Tuna Salad

Ingredients for 2 servings:

  • 1 gr. can/n tuna, in its own juice
  • 100 g lamb’s lettuce
  • 1 orange(s)
  • 1 avocado(s)
  • 1 small onion(s), red
  • ½ bunch chives, cut into fine rolls
  • 1 tbsp, heaped sunflower seeds, roasted without oil
  • 1 tbsp, heaped pumpkin seeds, roasted without oil
  • 1 orange(s), unsprayed (zest and 4 tbsp juice)
  • 2 tbsp vinegar
  • 2 tbsp oil
  • 150 g natural yogurt
  • 1 small chili pepper(s), finely chopped
  • 1 tsp mustard
  • some ginger, grated
  • n. B. Pepper, from the mill
  • n. B. Salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Healthy and delicious

Grate the zest of one orange, set aside, and then juice the orange. For the dressing, mix all ingredients well, add the orange zest, chili, and ginger. Peel the other orange, dice it, and place it in a bowl. Cut the avocado into roughly equal-sized cubes and add to the oranges. Also add the onions and chives. Drain the tuna, chop it, and add it to the other ingredients. Add the dressing and mix well. Just before serving, fold in the lamb’s lettuce and sprinkle the seeds on top.
