Ingredients for 1 servings:

  • 50 g ginger, pickled in syrup
  • 150 g dried fruit, e.g. pineapple, apricots, peaches, mango
  • 40 g butter
  • 60 g sugar
  • 100 ml pineapple juice
  • 100 g almond flakes
  • 200 g flour
  • 75 g sugar
  • ¼ tsp salt
  • 1 egg(s)
  • 100 g butter, cold

Instructions

Working time approx. 40 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 52 minutes

Fine slices with ginger and dried fruits

Finely dice the ginger and dried fruit. Bring the butter, sugar, and pineapple juice to a boil in a saucepan. Stir in the fruit and almond flakes and let cool. Preheat oven to 160°C fan/convection oven. Line a baking sheet with baking paper. Quickly knead the flour, sugar, salt, egg, and butter into a dough. Roll out the dough on the baking paper (approx. 40 x 40 cm). Spread the fruit mixture on top and bake in the preheated oven for approx. 12 minutes until golden brown. Let cool and cut into slices. Tip: If you like, you can melt 100g of dark chocolate coating in a water bath and spread it on the undersides of the slices.
