Grandma's herring salad

Ingredients for 4 servings:

  • 10 salted herring(s) in oil
  • 1 large onion(s)
  • 1 large apple
  • 3 large carrots, cooked, sliced
  • 4 bay leaves
  • 6 juniper berries
  • 100 ml cream
  • 100 ml milk (whole milk)
  • ½ tsp salt
  • 2 tbsp parsley, freshly chopped

Instructions

Working time approx. 15 minutes; Rest time approx. 6 hours; Total time approx. 6 hours 15 minutes

Pat the herring dry, cut into bite-sized pieces, slice the onion into rings, and thinly slice the apple. Combine everything in a large bowl, add the spices, and the cream and milk mixture. Mix thoroughly and let it sit in the refrigerator for at least 6 hours. Serve with baked potatoes.
