Spicy bean salad with herring fillet

Ingredients for 6 servings:

  • 2 herring fillets
  • 1 cup sour cream
  • 450 g beans, green, frozen
  • 2 apples, sour
  • 2 onions
  • 2 tbsp oil
  • 1 tbsp vinegar
  • 1 tbsp parsley, chopped
  • e.g. salt and pepper
  • 1 pinch(s) of sugar

Working time approx. 20 minutes; Rest time approx. 16 hours; Cooking/baking time approx. 8 minutes; Total time approx. 16 hours 28 minutes

to prepare well

Rinse the herring fillets several times, pat dry, cut into small pieces, toss with the cream, and let marinate, covered, in the refrigerator for at least 4 hours. Bring about 500 ml of salted water to a boil, add the frozen beans, cover, and simmer over low heat for about 8 minutes. Peel, quarter, core, and dice the apples. Peel and dice the onion. Drain the herring fillets, reserving the cream. Mix the beans with the apples, diced onion, and diced herring. Mix the sour cream with the salt, pepper, sugar, oil, and vinegar. Stir in the dressing, cover, and let the salad marinate for 12 hours. Before serving, toss the salad again and serve sprinkled with parsley.
