Cauliflower in a cheese coating

Ingredients for 4 servings:

  • 1 head of cauliflower
  • Salt
  • 2 tbsp butter
  • 150 g flour
  • 100 g cheese (Gouda)
  • 100 g cheese (Edam)
  • 4 eggs
  • 1 pinch of nutmeg
  • pepper

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Boil the cauliflower in salted water, remove from the pan, and drain. Bring 1/4 liter of water to a boil with butter and a pinch of salt. Pour in the flour, stir with a wooden spoon until it forms a dumpling, and transfer to a mixing bowl. Coarsely grate the cheese. Add the eggs one at a time to the batter and mix, then stir in the cheese. Season the creamy mixture with salt, pepper, and nutmeg. Place the cauliflower in a greased dish, cover with the cream, and place in the center of a hot oven. Bake at 200°C for approximately 15-20 minutes until lightly browned.
