Ingredients for 4 servings:
- 500 g minced meat, mixed
- 1 large zucchini
- 1 bell pepper(s), red or green
- 2 bags of rice
- salt water
- 1 feta cheese
- 200 ml chicken broth
- 1 tbsp oil
- marjoram
- salt and pepper
- 1 cup of tzatziki
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
First, cook the rice in salted water. Meanwhile, dice the bell peppers and feta cheese. Halve the zucchini and cut into 2 mm thin slices. While the rice is cooking, brown the minced meat in a little oil in another pot, season with salt and pepper, and deglaze with chicken stock. Add the chopped vegetables. Simmer for 10-15 minutes until the vegetables are tender. Finally, stir in the rice and feta cheese and season again with pepper, salt, and marjoram. Serve on a plate with some tzatziki.
