Yogurt-banana-chocolate-walnut muffins

Ingredients for 1 servings:

  • 2 bananas, ripe
  • 200 g natural yogurt
  • 30 g rapeseed oil or other neutral oil
  • 250 g flour
  • 70 g cocoa powder, unsweetened
  • 2 eggs
  • ½ pack of baking powder
  • 1 packet of vanilla sugar
  • 1 pinch of cinnamon
  • 1 pinch of salt
  • 30 g chocolate, diced
  • 1 handful of walnuts, roughly chopped
  • Fat for the mold

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 40 minutes

Preheat the oven to 180°C (top/bottom heat). Roughly mash the bananas with a fork. Mix the bananas with all the other ingredients except the chocolate cubes and walnuts until a soft batter forms. Then fold in the chocolate cubes and walnuts. Grease a muffin tin and divide the batter into the holes. The cups should be no more than 2/3 full. Bake for approximately 30 minutes. Remove the muffin tin from the oven and let the muffins cool for a few minutes. Then let them cool on a wire rack. Makes 8.
