Pesto pasta with peppers and bacon cubes

Ingredients for 4 servings:

  • 400g spaghetti
  • salt water
  • 250 g bacon cubes
  • 190 g red pesto
  • 500 g mixed peppers
  • 3 tomatoes
  • 1 large onion(s)
  • 2 cloves garlic
  • some olive oil
  • salt and pepper

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

quick and easy to prepare

Wash the peppers and tomatoes and cut into pieces. Peel the onion and garlic and chop both finely. Add a little olive oil to a large pan and fry the onions until translucent. Then add the garlic and bacon cubes and fry until the bacon is cooked. Transfer the contents of the pan to a preheated plate and keep warm, e.g., in the microwave. Cook the pasta in salted water according to the package instructions. Top up the pan with a little more olive oil if necessary and fry the peppers in it. Just before the peppers are cooked (they should still have a bit of a bite), add the tomatoes and let them warm through. Season the vegetables with salt and pepper. Finally, add the pasta, bacon, onions, and pesto to the pan with the peppers and mix everything together well.
