Ingredients for 4 servings:
- 600 g Maultasche(s)
- 2 bell peppers (I use 1 red and 1 yellow)
- 4 m.-sized carrot(s)
- 1 onion(s), red
- 100 g cherry tomatoes
- 1 can coconut milk
- curry powder
- salt and pepper
- 1 tsp, leveled vegetable broth, instant
- Spice mix (chili powder with garlic)
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 45 minutes
with coconut milk, curry and vegetables
Cut the Maultaschen into strips. Dice the onions, slice the bell peppers and carrots, and quarter the tomatoes. Fry the Maultaschen in oil and then set aside. Briefly fry the onions, then add the bell peppers and carrots. Stir in the coconut milk and broth. Reduce and season to taste. Fold in the Maultaschen and tomatoes, then heat briefly.
