Salmon tartare with apple and caramelized walnuts

Ingredients for 3 servings:

  • 200 g smoked salmon
  • 200 g apple, sour variety, one large or two small
  • 2 tsp olive oil
  • 1 tsp honey
  • 1 tsp mustard, grainy
  • 2 tsp lemon juice
  • 1 spring onion(s)
  • ½ bunch chives
  • 25 g walnuts
  • 2 tbsp maple syrup, alternatively honey
  • e.g. salt and pepper
  • n. B. Toast bread, toasted

Instructions

Working time approx. 25 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 1 hour

Finely dice the smoked salmon, half the apple (e.g., Mairac or Cox Orange), and the spring onion, and mix together. Chop the chives and fold in. Stir in the mustard, honey, lemon juice, and olive oil, and season with salt (carefully!) and pepper. Let stand for a while. Thinly slice the remaining apple, arrange on plates, and drizzle with a little lemon juice. Finely chop the walnuts and toast them lightly in a non-stick pan, then caramelize them with the maple syrup. Arrange the tartare on the plates and scatter the walnuts over the apple slices. Serve with toasted bread, perhaps spread with a little butter.
