Pear cake with cinnamon and vanilla

Ingredients for 1 servings:

  • 3 bulb(s)
  • 1 sachet of vanilla sugar, alternatively the pulp of a vanilla pod
  • 2 tsp cinnamon
  • some lemon juice
  • 200 g butter
  • 4 m.-sized eggs
  • 200 g sugar
  • 300 g wheat flour type 405
  • 2 tsp baking powder
  • some salt

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

Preheat the oven to 175°C fan/gas mark 3. Line a 26cm springform pan with baking paper and set aside. Take the butter out of the refrigerator a little early to soften. Peel the pears, dice them, and marinate them in a bowl with the vanilla sugar, a little cinnamon, and a dash of lemon juice. Meanwhile, beat the butter and eggs until fluffy and add the sugar. Mix the flour and baking powder together with the salt. Mix in the pears. Pour the batter into the pan and bake for about 45 minutes. Then turn the cake out and let it cool on a wire rack. Decorate the cake with a little cinnamon powder, if desired.
