The sea in a sandwich

Ingredients for 6 servings:

  • 12 slice(s) wholemeal bread (rye wholemeal bread), thinly sliced
  • 2 handfuls of seafood, frozen
  • 4 tbsp, heaped cream cheese, grainy
  • 1 spring onion(s), red
  • 1 dashes lime juice
  • 1 shot of vinegar (pear vinegar)
  • 2 pinches of pepper, coarsely ground
  • some olive oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Heat a splash of oil in a pan. Sauté the seafood and season with pear cider vinegar, pepper, and lime juice. Allow the seafood to cool, while it cools. Thinly slice the spring onion. Cut 12 thin slices of bread and set aside. Mix the seafood, cream cheese, and spring onion together. Top 6 slices of bread with the mixture and cover with the remaining slices. Turn on a sandwich toaster and brush the top slices of the sandwiches and the bottom plate of the toaster with oil. Place the sandwiches in the toaster and bake until golden brown.
