Ingredients for 4 servings:

  • 4 slices of black bread
  • 8 eggs
  • 250 g North Sea crabs
  • 1 onion(s), very finely diced
  • 4 gherkins
  • 1 tomato(s)
  • butter
  • Paprika powder, hot
  • Chives, plenty, fresh
  • Salt
  • Parsley

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Butter the bread slices. Place one slice at a time on a plate. Beat the eggs, then season generously with paprika and salt. Heat the butter in a pan. Sauté the onion until golden brown. Add the washed shrimp and sauté, making sure they don’t brown. Pour the beaten egg over the slices. Place the lid on the pan and let the egg mixture set. Spread the egg mixture on the bread slices and sprinkle with chives. Cut the washed tomato into 4 slices. Cut the gherkins into fan-shaped slices. Garnish each slice with a tomato slice and a gherkin. Sprinkle with a little parsley for decoration. It tastes just as good as a hearty breakfast as it does as a welcome change from an evening sandwich. And you can quickly prepare a small meal for unexpected guests.
