Belle's Banana Ginger Jam

Ingredients for 1 servings:

  • 2 kg banana(s)
  • 1 kg gelling sugar, 1:1 or 0.5 kg gelling sugar 2:1
  • 50 g fresh ginger
  • 4 small lemons

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel, slice, and weigh the bananas. Place them in a saucepan with the same amount or half the amount of gelling sugar (depending on the type of sugar you use). Peel and very finely dice the ginger, or press it through a garlic press. Remove the zest and white pith from the lemons. Remove the membranes from the lemon segments and fold them into the bananas along with the ginger and gelling sugar. Heat everything while stirring and cook according to the gelling sugar instructions. Rinse the twist-off jars and lids with hot water. Immediately pour the hot jam into the prepared twist-off jars, screw on the lids, and leave on the lids for a few minutes.
