Stuffed peppers with feta, arugula and minced meat

Ingredients for 4 servings:

  • 4 bell peppers
  • 250 g minced meat
  • 200 g feta cheese
  • 1 bunch arugula
  • 1 small onion(s)
  • 2 garlic cloves
  • some vegetable stock powder
  • e.g. Parmesan
  • oil

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 50 minutes

Peel and dice the garlic and onion and sauté in a pan with a little oil. Add the minced meat and brown. Season with vegetable stock. In the meantime, wash, halve, and deseed the bell peppers. Dice the feta cheese and wash the arugula. Once the minced meat is browned, remove the pan from the heat. Add the diced feta cheese and arugula and mix well. Stuff the bell peppers with the minced meat mixture. If desired, you can sprinkle with a little Parmesan cheese. Bake the bell pepper halves in a preheated oven on the middle rack for 10 minutes at 180°C fan/convection oven (200°C top/bottom heat). Alternatively, you can heat them in a covered pan over medium heat.
