Ingredients for 2 servings:
- 1 small endive salad
- 1 ball of mozzarella (buffalo)
- 1 mandarin orange(s) or clementine
- 1 avocado(s), ripe
- some lemon juice
- 2 tbsp pumpkin seeds, roasted without fat
- some pumpkin seed oil
- 6 tbsp Balsamic vinegar bianco
- 5 tbsp olive oil
- 2 tbsp broth
- 2 tsp coarse-grained mustard
- Pepper, from the mill
- Salt
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Starter or small main course
Cut the endive into thin strips. Peel the mandarin orange and slice it thinly. Slice the mozzarella cheese thinly. Halve the avocado, remove the stone, and peel it. Then slice the avocado halves thinly. Drizzle with lemon juice to prevent browning. For the dressing, mix all ingredients well. Set aside 2-3 tablespoons. Mix the endive with the dressing and arrange on two plates. Alternate mozzarella, mandarin orange, and avocado slices on top. Scatter the pumpkin seeds over the top and drizzle with the remaining dressing. Finally, drizzle with a few drops of pumpkin seed oil.
