Chocolate tangerine cake with meringue

Ingredients for 1 servings:

  • 75 g butter
  • 5 eggs, 3 of them separated
  • 150 g flour
  • 30 g cocoa powder
  • 1 tsp baking powder
  • 275 g sugar
  • 2 cans of tangerine(s)
  • 250 g cream cheese
  • 1 tbsp apricot jam
  • 3 tbsp lemon juice
  • 200 ml cream
  • 4 tbsp sugar

Instructions

Working time approx. 30 minutes; Rest time approx. 2 days 12 hours; Total time approx. 2 days 12 hours 30 minutes

Cream the butter with 3 egg yolks, 2 whole eggs and 100g sugar until fluffy. Stir in the flour, cocoa and baking powder. Beat the egg whites with 175g sugar until stiff. Grease a springform pan, pour the batter into it and spread the beaten egg whites on top. Bake the cake in a preheated oven at 180°C for approx. 30 minutes. Then let it cool and cut horizontally. Drain the mandarins. Whip the cream with the sugar until stiff. Carefully mix the cream cheese with the jam, lemon juice and mandarins and fold in the whipped cream. Place a cake ring around the bottom layer, spread the cream on it and carefully place the base with the meringue on top. Chill for 1 hour.
