Ingredients for 2 servings:
- 100 g lamb’s lettuce
- 50 g walnuts, roughly chopped
- 4 tbsp white wine vinegar
- 3 tbsp rapeseed oil
- 4 tbsp broth
- ½ stalk vanilla pod(s), the pulp
- 1 small onion(s), finely chopped
- 1 tsp thyme leaves, fresh
- 3 tbsp cranberries, from the jar or can
- n. B. Salt and pepper from the mill
- n. B. Pepperberries, pink, pink
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes

Wash and spin the lamb’s lettuce. For the dressing, mix all ingredients well. Toss the lettuce with the dressing in a bowl and divide between two plates. Sprinkle the walnuts over the salad. If you like, garnish with some whole pink peppercorns. This salad makes a great appetizer for game.
