Smokey's lamb's lettuce with cranberry dressing

Ingredients for 2 servings:

  • 100 g lamb’s lettuce
  • 50 g walnuts, roughly chopped
  • 4 tbsp white wine vinegar
  • 3 tbsp rapeseed oil
  • 4 tbsp broth
  • ½ stalk vanilla pod(s), the pulp
  • 1 small onion(s), finely chopped
  • 1 tsp thyme leaves, fresh
  • 3 tbsp cranberries, from the jar or can
  • n. B. Salt and pepper from the mill
  • n. B. Pepperberries, pink, pink

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash and spin the lamb’s lettuce. For the dressing, mix all ingredients well. Toss the lettuce with the dressing in a bowl and divide between two plates. Sprinkle the walnuts over the salad. If you like, garnish with some whole pink peppercorns. This salad makes a great appetizer for game.
