Ingredients for 1 servings:

  • 2 bananas, overripe
  • 2 eggs
  • 40 ml oil, neutral
  • 100 g flour
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • n. B. pineapple pieces
  • e.g. apple, cut into small pieces

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Mash the bananas with a fork. Whisk together the eggs, oil, and mashed bananas. Then combine the flour, baking powder, and baking soda and stir into the egg mixture. Finally, add small pieces of pineapple or apple. If the bananas aren’t sweet enough, you can also add a little powdered sugar or agave syrup. Place paper baking cups in a muffin tin and divide the batter. These are rather small portions, after all, they’re meant for small children. Bake approximately 10 muffins at 180°C (350°F) or 160°C (320°F) fan-assisted for approximately 15-20 minutes, depending on your oven. (Do the toothpick test.)
