Quark sponge cake with chocolate drops

Ingredients for 1 servings:

  • 350 g butter or margarine
  • 500 g wheat flour type 405 or 550
  • 350 g powdered sugar
  • 100 g whipped cream
  • 250 g low-fat curd cheese
  • 1 bottle of vanilla flavor
  • 1 packet of vanilla sugar
  • 1 packet of baking powder
  • 1 dash of lemon juice
  • 6 eggs
  • 200 g chocolate drops, milk and/or dark chocolate, or fruit, optional
  • some fat and breadcrumbs or flour for the mold
  • some powdered sugar for decoration

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 30 minutes

Sift the flour and add the baking powder to a well, briefly mixing both ingredients together. Whisk the powdered sugar, vanilla sugar, and eggs (one at a time) in a mixing bowl until fluffy. Then add the melted butter or margarine, cream, vanilla extract, and a dash of lemon juice, stirring constantly. Alternately stir in the quark and the flour mixed with the baking powder. Finally, carefully fold in fruit or chocolate chips, if desired. Pour the quark mixture into a greased and floured cake tin and bake in a preheated oven at 180°C (top/bottom heat) for approximately 55-60 minutes (use a toothpick to test the doneness). Allow the cake to cool thoroughly and sprinkle with powdered sugar, if desired.
