Ingredients for 1 servings:
- 1 tsp coconut oil for the baking pan
- 250 g spelt flour type 630
- 50 g cocoa powder
- ½ tsp baking soda
- 1 pinch of salt
- 1 pinch of cinnamon
- 1 pinch(s) of turmeric
- 50 g walnuts, roughly chopped
- 350 g banana(s), very ripe
- 60 ml oil
- 60 g coconut oil
- 2 tsp apple cider vinegar
- 150 ml coconut milk
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 10 minutes
Preheat oven to 170°C (350°F). Grease a loaf pan with 1 teaspoon of coconut oil. Combine flour, cocoa powder, baking soda, spices, and walnuts in a bowl. Blend bananas, oil, coconut oil, vinegar, and coconut milk in a tall bowl with an immersion blender, then mix with the dry ingredients. Pour batter into the loaf pan. Bake in the preheated oven for about 50 minutes.
