Kale salad with smoked eel

Ingredients for 4 servings:

  • 300 g kale, fresh
  • 50 g cranberries, dried
  • ½ carrot(s)
  • 200 g smoked eel(s)
  • olive oil
  • salt and pepper
  • Sugar
  • fig mustard

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 2 minutes; Total time approx. 32 minutes

Winter salad, healthy and delicious

Trim and wash the kale, and blanch it for about 2 minutes. Then rinse it in ice water, dry it, and finely chop it. Peel and finely grate the carrot. Add to taste. Half a carrot was enough for me. Make a marinade and add it to the kale along with the dried berries. Fillet the smoked eel and serve with fresh bread. It tastes wonderfully fresh and is very healthy.
