Ingredients for 10 servings:
- 10 slices of toast
- 10 chicken schnitzels (approx. 80g each)
- 600 g broccoli
- salt and pepper
- 4 tbsp oil
- 2 tbsp mayonnaise for salad
- 125 g mozzarella, grated
- 150 g crème fraîche
- 200 g double cream cheese
- 3 tomatoes, sliced
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Divide the broccoli into florets and cook in salted water for about 6 minutes. Drain. Season the chicken cutlets with salt and pepper and fry in oil on both sides for about 8 minutes. Toast the bread and place it on a baking sheet lined with baking paper. Spread each slice with mayonnaise. Place a chicken cutlet on each slice. Distribute the drained broccoli florets evenly over the bread. Mix the grated mozzarella with the cream cheese and crème fraîche, season with salt and pepper, and spread evenly on the slices of toast. Bake in a preheated oven at 220°C (fan: 200°C; gas mark 5) for about 10 minutes. Garnish with tomato slices and sprinkle with fresh black pepper.
