Kasseler in mushroom sauce

Ingredients for 2 servings:

  • 1 onion(s)
  • 250 g mushrooms
  • 40 g clarified butter
  • 400 g smoked pork, boneless
  • 100 ml white wine
  • 200 ml broth
  • 150 g crème fraîche
  • salt and pepper
  • chives

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Peel and finely dice the onion. Trim the mushrooms and chop them into small pieces, depending on their size. Melt the clarified butter and sauté the diced onions until translucent. Add the mushrooms and fry briefly. Deglaze with the white wine, bring to a boil briefly, and add the stock. Cut the smoked pork into 1 cm thick slices and cook in the sauce. Remove the meat from the pot. Stir the crème fraîche into the sauce and bring to a boil briefly. Season with salt and pepper. Add the chopped chives and the meat to the sauce and heat briefly. This goes well with potatoes, but pasta is also delicious.
