Ingredients for 4 servings:

  • 500 g chicken fillet(s)
  • 1 large onion(s)
  • 2 garlic cloves
  • 2 bell peppers
  • 2 stalk(s) Celery
  • 500 g tomatoes
  • 100 g smoked ham, e.g., diced
  • 150 g Cabanossi
  • 1 bag of rice (boil-in-the-bag)
  • ¼ liter chicken stock
  • salt and pepper
  • Cayenne pepper
  • 250 g tomatoes, pureed
  • 1 tsp thyme
  • ½ bunch of spring onions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Dice the meat, dice the onions and garlic, and slice the sausage. Dice the tomatoes. Brown the meat, then add the ham, sausage, onions, garlic, bell peppers, and celery one after the other and fry briefly. Add the tomatoes and deglaze with the stock and passata. Season with salt, pepper, cayenne pepper, and thyme. Bring everything to a boil, cover, and simmer for about 20 minutes. Add the spring onions before the end of the cooking time and season to taste. In the meantime, cook the rice as usual. I serve the rice separately so everyone can decide for themselves whether they want to eat the chicken pot with rice or without.
