Eggnog cake

Ingredients for 10 servings:

  • 80 g margarine
  • 100 g sugar
  • 5 eggs
  • 200 g ground almonds
  • 100 g chocolate shavings
  • 1 tsp baking powder
  • 2 tbsp rum
  • 1 small jar of eggnog
  • 2 cups of sweet cream

Instructions

Working time approx. 1 hour 20 minutes; Total time approx. 1 hour 20 minutes

Mix together margarine, 80g sugar, 5 egg yolks, almonds, grated chocolate, baking powder, rum, and advocaat. Then beat the 5 egg whites and 20g sugar until stiff and fold into the mixture. Pour into a springform pan and bake in a preheated oven at 180°C for about 60 minutes. Then let cool. Cover the cake with whipped cream (including the sides) and pipe small towers onto the edge using a piping bag. Then pour in more advocaat. Sprinkle the grated chocolate over the towers. Then refrigerate to chill.
