Ingredients for 1 servings:

  • 250 g low-fat curd cheese
  • 200 g fruit pulp (apple-blackcurrant pulp)
  • 2 tbsp chia seeds
  • 4 tbsp milk
  • n. B. Sweetener
  • Cashew nuts
  • 1 egg(s)

Working time approx. 10 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 35 minutes

Cheesecake with chia seeds

Soak the chia seeds in the milk one hour in advance. Preheat the oven to 200°C fan/convection oven. Whisk the quark with the apple and blackcurrant puree, the chia seeds, and the egg, and sweeten to taste. Pour the batter into a small dish. I used small quiche dishes. Then place it in the oven for about 25 minutes. About halfway through, add the cashews and a teaspoon of chia seeds. The cake should be lightly browned. It’s best to let it cool with the oven door slightly ajar.
