Low-carb coconut chocolate slices

Ingredients for 4 servings:

  • 3 eggs
  • 1 pinch of salt
  • 1 tsp vanilla paste or some vanilla flavoring
  • 1 tbsp, heaped cane sugar
  • 200 ml cream
  • 200 g desiccated coconut
  • 100 g Choco Chunks, dark chocolate
  • Fat for the mold

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Beat the eggs with a pinch of salt until frothy. Add the vanilla paste, brown sugar, and cream and mix well; do not overbeat. Fold in the desiccated coconut and Choco Chunks and mix well. Meanwhile, preheat the oven to approximately 180°C (top/bottom heat). Grease the baking pan and spread the batter evenly. Bake for approximately 20 minutes. Tips: I like to use two square baking dishes measuring approximately 20 x 20 cm, but you can also use any other baking dish; the baking time may vary. You can also make muffins; these take 10-15 minutes, depending on the size. The coconut slices can be eaten warm or cold from the refrigerator.
