Ingredients for 1 servings:

  • 3 mangoes
  • 600 g sugar
  • 2 bottles of grain or fruit brandy

Peel the mangos and dice the flesh. Place the mango pieces in a large preserving jar (at least 4 liters in capacity). Fill the jar, cover with sugar, and let it steep for one hour. Then add the grain or fruit brandy (grain is relatively neutral in flavor, while fruit brandy adds a subtle background note) and let it sit in a cool, dark place for at least 4 weeks (the longer the better), shaking or stirring occasionally. Then filter and bottle. Filtering works best using a standard kitchen sieve lined with a tea towel. The residue remaining in the towel can then be squeezed out.
