Green salad with mozzarella and melon

Ingredients for 2 servings:

  • 150 g mixed green salad (e.g. lettuce and frisée)
  • 500 g melon(s), (network melon, alternatively honeydew melon)
  • 1 ball of Buffalo Mozzarella
  • 4 sprigs of mint
  • 2 tbsp lemon juice
  • 2 tsp honey
  • 5 tbsp olive oil
  • some salt and pepper, colorful, from the mill

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Mix the lemon juice with honey, salt, and pepper. Whisk in the olive oil. Trim the lettuce, roughly tear it, wash it, and gently spin it dry. Peel and deseed the melon and cut it into 2 cm pieces. Roughly chop the mozzarella. Strip the mint leaves from the stems. Mix the lettuce, melon, mozzarella, and mint in a bowl and fold in the dressing. Goes well with pan-fried or grilled dishes. Serve with a baguette.
