Low-carb vegetable stir-fry

Ingredients for 1 servings:

  • 2 handfuls of mushrooms, fresh
  • ½ rib, cooked, or smoked pork
  • 1 m.-large zucchini, green
  • ½ pack of feta cheese or white cheese
  • 4 tbsp liquid coconut oil, more if needed
  • some salt and pepper
  • some herbs of Provence

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Clean and slice the mushrooms if necessary. Add the oil to a pan and lightly fry the mushrooms. Meanwhile, cut the ribs into small cubes and add them. Wash and grate the zucchini and add them to the pan. Mix everything well. Cut the feta cheese into small cubes and add it to the pan. Season with a little salt and pepper, along with Provençal herbs. A very quick, delicious low-carb dish. Also available as a vegetarian option. If you prefer, omit the meat and replace it with paprika, for example.
