Ingredients for 4 servings:
- 700 g boneless smoked pork
- 1 liter of broth
- 350 g potatoes
- 350 g green beans
- 50 g butter
- 3 tbsp flour
- 80 ml milk
- 2 tsp mustard
- 2 tsp horseradish from the jar
- e.g. salt and pepper
- 40 g breadcrumbs
- Fat for the mold
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 10 minutes
Let the smoked pork simmer in the gently simmering broth for about 20 minutes. Meanwhile, peel and dice the potatoes and cook in salted water until soft. Wash, trim, and roughly chop the beans. Cook in boiling salted water for about 7 minutes. Cut the smoked pork into thick slices and place in the center of a greased casserole dish. Melt 25g of butter, sweat the flour in it, and gradually stir in the broth and milk. Simmer the sauce for 10 minutes. Preheat the oven grill. Season the sauce with mustard, horseradish, salt, and pepper. Then add the potatoes and beans. Arrange the sauce around the smoked pork in the dish. Sprinkle the remaining butter in small pieces on top and sprinkle with the breadcrumbs. Bake in the oven for about 15 minutes.
