Ingredients for 4 servings:

  • 200g ciabatta
  • 6 tbsp olive oil
  • 1 garlic clove(s)
  • 2 onions, red
  • 250 g cherry tomatoes
  • 250g mozzarella
  • 1 bunch of basil
  • salt and pepper
  • 30 g Parmesan, sliced

Working time approx. 25 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 40 minutes

First, preheat the oven to 220°C (top/bottom heat) or 200°C (fan oven). Brush a baking dish with 1 tablespoon of olive oil. Halve the ciabatta lengthwise and cut each half into approximately 2 cm thick slices. Peel, grate, or chop the garlic and sauté it in 3 tablespoons of oil. Toast the ciabatta slices in the oil and then add them to the oiled dish. Peel, halve, and finely chop the onions. Quarter the tomatoes, tear the mozzarella, and chop a few basil leaves. Mix everything with the ciabatta in the dish, season with salt and pepper, and drizzle with the remaining olive oil. Bake in the hot oven for about 15 minutes. Garnish with the Parmesan shavings and the remaining basil leaves before serving.
