Ingredients for 8 servings:
- 8 schnitzels
- 6 tbsp oil
- 6 tbsp flour
- 2 tsp rosemary, shredded
- 2 tsp thyme, shredded
- 4 onions, cut into rings
- 250 ml cream
- 1 liter vegetable broth
- 300 g sour cream
- 200 g black olives without stones
- 400 g sheep’s cheese
- salt and pepper
- Spice mix (gyros spice)
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes
Wash and pound the schnitzels, and season with salt, pepper, and gyro seasoning. Then coat them in flour and fry in hot fat until browned all over. Remove the schnitzels from the pan and sauté the onion rings in the frying fat. Add the rosemary, thyme, cream, broth, sour cream, and olives, stir to combine, and bring to a boil. Place the schnitzels in a roasting pan and pour the sauce over them. The sauce should cover the schnitzels. Roughly crumble the feta cheese, spread it over the schnitzels, and bake uncovered in the oven at 180°C for about 20 minutes.
