Carrot and mandarin couscous

Ingredients for 1 servings:

  • 2 carrots
  • 1 small tangerine(s)
  • 40 g couscous, instant
  • n. B. water
  • e.g. dried fruits such as cranberries, apricots, raisins
  • some curry powder
  • some salt and pepper
  • some cinnamon powder
  • Paprika powder
  • chili powder
  • optionally almond(s), chopped and roasted
  • possibly chopped coriander
  • Oil, for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

light, quick dish

Mix the couscous with the chopped dried fruit, cinnamon, and curry. Boil water and cover the couscous mixture with it, then let it swell in a bowl. Finely slice the carrots, fillet the mandarin oranges, and cut into small pieces. Briefly fry the carrots in a little oil and curry powder, adding salt and pepper to taste. Reduce the heat to low and sauté the carrots for a while longer. Then add the mandarin oranges and sauté briefly. Add the couscous mixture and mix all ingredients well. Season to taste with paprika, chili, salt, and pepper. Coriander and chopped almonds are great for adding a delicious finishing touch. Tip: If you like, you can refine the dish with cream or a flavorful oil, which will also add a little more richness.
