Ingredients for 1 servings:

  • 220 g milk
  • 230 g water
  • 30 g fresh yeast
  • 300 g wheat flour type 1050
  • 300 g rye flour
  • 8 g sourdough (sourdough extract)
  • 1 tbsp salt
  • some honey or sugar

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 50 minutes; Total time approx. 2 hours 10 minutes

From the Thermomix

Preheat the milk in the Thermomix for 1 minute at 37°C, speed 2. Then mix the milk, lukewarm water, yeast, and sugar or honey for another minute at 37°C, speed 2. Add the flour, sourdough extract, and salt and let it knead for 3 minutes. Remove the dough from the oven and knead thoroughly by hand on a floured surface. Then let it rise in a baking pan for 1 hour in a warm place. We always put a towel over it and place the baking pan in a bag under the blanket on the sofa. Preheat the oven to 250°C (top and bottom heat). Place the bread and the baking pan in the oven and place a small bowl of water on the bottom. After 10 minutes, reduce the heat to 210°C and bake for another 30 minutes.
