Orange peel syrup

Ingredients for 1 servings:

  • 4 orange(s), untreated, peel only
  • 2 kg sugar
  • 1,500 ml water
  • 35 g citric acid

Instructions

Working time approx. 30 minutes; Rest period approx. 3 days; Total time approx. 3 days 30 minutes

Wash the oranges and peel the peel thinly with a vegetable peeler. Then, using a sharp knife, cut the peel crosswise into fine strips. Place the orange peel strips in a large, lidded saucepan with the sugar, water, and citric acid. Stir and cover. Stir frequently over the next few hours so the sugar dissolves in the water. After three days, strain out the orange peel pieces and pour the syrup (which already has a lovely aroma) into bottles rinsed with boiling water (I use 1/2-liter cream bottles with a larger opening). The syrup will keep for several weeks if refrigerated after opening.
